I forgot how much I love these low fat chocolate cherry cookies! They are so yummy and fudgie, it is hard to believe they are low fat. This is an original recipe from my brother who actually is a certified chef:) He replaces the main fats usually used in cookies with a prune puree which creates a slightly puffy, chewy cookie-YUUUMMM:)
COOKIE INGREDIENTS…
2 Cups Sugar
1/2 Cup Prune Puree (4oz. prunes blended with 3T hot water)
1 Cup Milk
1/2 Cup Coffee
2 t Vanilla
2 1/4 Cups flour
1 Cup Cocoa
1 1/2 t Baking Soda
1 t Salt
1 Cup Dried Cherries
1/2 Cup Walnuts
1/2 Cup Chocolate Chips
MIX ALL INGREDIENTS UNTIL WELL BLENDED.
THIS BATTER IS NOT AS STIFF AS NORMAL COOKIE BATTER.
USING MEDIUM SIZE COOKIE SCOOP (3 TABLESPOON) PLACE SCOOPS ON GREASED COOKIE SHEETS BEING SURE TO LEAVE ENOUGH ROOM BETWEEN EACH ONE.
BAKE 8 MINUTES AT 375 DEGREES.
