This cheesy vegetable soup is another recipe that falls into my favorite comfort foods so I really wanted to share it with you:) The recipe was given to my dad many years ago from a buddy at work named Herald. I want to make sure I give credit since this is not an original recipe of mine. In fact the only thing I change is adding more veggies! So thanks dad and Herald:) I know anyone making this soup will enjoy it!
INGREDIENTS
1 1/2 Quarts water
3 potatoes, peeled and diced
3-6 carrots, peeled and diced
1/2 small onion
2-3 cups chopped broccoli (fresh or frozen)
2-3 cups chopped cauliflower (fresh or frozen)
2T fresh parsley
3 chicken bouillon cubes
2 small cans cream of mushroom or cream of chicken soup
1 pound Velveeta
INSTRUCTIONS
(Soooooo good yet soooooo easy!)
Add all the ingredients above except the 2 cans of cream soup and Velveeta and cook until veggies are tender. Once the veggies are tender, remove soup from the stove and stir in the 2 cans of cream soup and Velveeta. This cheesy vegetable soup is a great vegetarian dish but as you can see in my picture, we served it with warmed slices of honey ham so my husband was happy:)
