Yummy Grinch Truffles Recipe

Yumm Grinch Truffles Pedestal 2


Red Velvet Boxed Cake

1 1/2 c water

1/2 c vegetable oil

3 eggs

I can of vanilla frosting

OPTIONAL 1t almond extract

bag of white chocolate chips

1-2 T oil

green food coloring

OPTIONAL Assorted cute Grinch sprinkles

  1. Bake cake according to package instructions.

  2. Once cake has cooled, break it apart and add it to a mixing bowl with vanilla frosting, almond extract and mix on high for 2 minutes.

  3. Scoop out mixture and form balls and place on a cookie sheet lined with wax paper.

TIP- I use the small cookie scoop from Pampered Chef and it works perfectly.

TIP- If the cake frosting mixture is too soft to make balls, place the bowl in the freezer for a little while.

4.  Place formed balls into the freezer while you prepare chocolate for dipping.

5.  Melt white chocolate by placing a bowl over a pan with warm water on the stove.  You can use the microwave if you use 50% power and check it and stir after each 30 seconds so that it does not dry out.  There are also wonderful little melting pots that I prefer to use since I dip a lot of cookies and candies and this keeps the chocolate melted during the process (I am a slow dipper!)  I usually add 1-2T of oil to get the chocolate to the dipping consistency that I prefer, just add 1T at time.  Now add a few drops of green food coloring at a time until you get the lovely Grinch green color that you prefer:)

6.  Take your undipped Grinch truffles out of the freezer and using a toothpick dip into melted chocolate and then place back on the wax paper.  Dip the toothpick back in the chocolate to pick up just a little more chocolate to fill in the toothpick hole in your dipped truffle.  Don’t forget to add sprinkles after each one because the chocolate can harden quickly.

7.  Make yourself a cup of really good coffee.  Sit in your favorite chair and enjoy your Grinch truffle and cup of java!  Then get ready to whip up some adorable homemade candy boxes for your yummy truffles!
