Sausage Cabbage Soup Recipe

POOR MAN’S SOUP

This is my favorite soup and it is quick, easy, and very inexpensive to make.  Before serving add some fresh grated parmesan and homemade croutons to your sausage cabbage soup to make it extra special and yummy.

Sausage Cabbage Soup Ingredients INGREDIENTS…

2T oil

2 carrots diced

2 pieces celery diced

1/2 onion diced

1/2 cabbage chopped

1- 14.5 oz can of diced tomatoes (I used basil garlic canned tomatoes this time but if I am making it just for my husband and I, I love the diced tomatoes with chilis to add a  little extra spice to the soup)

1# of sausage (I have used all kinds of sausage, this happens to be some venison sausage my husband made but I also like the basic Jimmy Dean or Bob Evans sausage.)

2t ground fennel

2 bay leaves

1/2t black pepper

6 cups of beef broth

OPTIONAL parmesan and croutons

Brown your sausage and then drain off grease.  Add 2T oil to a pan and sauté your carrots, celery, and onion for about 5 minutes on medium.  Then add tomatoes, beef broth, fennel, bay leaves, pepper, sausage, and cabbage and simmer for about 15-20 minutes.  Before serving add freshly grated parmesan cheese and some large homemade croutons if you have them:)
